2015 was the year of sweet ‘n salty chicken thighs. This humble recipe for pan-fried chicken thighs basted in a sticky and savoury sauce was the hands-down reader favourite of the year. Trailing behind it, but not by far, were a couple of slow cooker recipes (these Slow Cooker Butter Chicken Sliders and this Healthier Slow Cooker Pulled Pork), a family favourite Make-Ahead Black Bean & Spinach Enchilada Casserole and a super-easy quick and creamy weeknight rotini.
There’s a theme emerging here, I think. Y’all love flavourful family-friendly food that doesn’t take a lot of fussing and mussing. Meals that are simple enough for weekdays but fancy enough to throw down in front of some last minute dinner guests. Food that is “real” but realistic.
Which is all pretty life-affirming (or at least blog-affirming) for me. Because I started Kiwi & Bean for this exact reason—to share recipes that make feeding a family a little bit more tolerable and a lot more delicious. To show that healthier food doesn’t have to be hard to swallow.
And whenever I have moments of self-doubt about what I’m doing, I read your awesome feedback. Like one reader, a self-declared “food snob,” who recently emailed to tell me that she and her family “LOOOOOVVVE” every one of the 10 Kiwi and Bean recipes they’ve tried. Wow! And another reader who commented “Sarah, I love this website more and more with every recipe I make. Thanks so much for so many easy, healthy, and delicious recipes!” Oh, my heart!
