Maple-Garlic Delicata Squash Oven Fries

  • 1 large or 2 small delicata squash
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon pure maple syrup
  • 1 garlic clove, crushed or minced
  • ¼ teaspoon sea salt (plus additional to taste)
  1. Preheat the oven to 375 degrees and line a large rimmed baking sheet with parchment paper.
  2. Cut the ends off of the delicata squash, halve it lengthwise, scrape the seeds out (using a small spoon) and slice each half into thin half moons.
  3. Combine the olive oil, maple syrup, garlic and salt in a medium-sized mixing bowl, then add the delicata and toss until it is evenly coated with the oil mixture.
  4. Arrange the squash in a single layer (some overlap is inevitable) on the parchment-lined baking sheet, and roast for about 30 minutes, stirring once about halfway through the cooking time, until the squash starts to turn brown and crispy.
  5. Sprinkle with additional salt to taste.
