If you're skeptical about raw corn, just trust me on this one. When corn season is at its height there is no better (or simpler) way to eat it. This salad is at once sweet (from the corn), sour (from the lime) and salty (from the feta) and few people can resist it. I've made it for multiple family gatherings, and it is always a hit. Even my 18 month old son shovels it in by the handful.

Serves: 4-6
Ingredients
3 sweet cobs of corn
3 green onions, chopped
A large handful of basil, finely chopped
Juice of 1 lime
1 tablespoon extra virgin olive oil
½ cup finely crumbled feta cheese
Salt and pepper, to taste
Instructions
Cut the kernels off the corn cobs and dump them into a medium-sized salad bowl. Add the green onions, basil, lime juice and olive oil and stir to combine.
Add the feta cheese, stir gently to combine, then season to taste with salt and pepper.
