Greek Pasta Salad

Greek Pasta Salad | www.kiwiandbean.com

Well hello Saturday June 21, 2014. We’ve been waiting for you.

I’ve often thought it would be lovely to live in a warm summery climate year round, to drop my kid at school wearing a t-shirt and sandals, to eat Christmas dinner on the deck, to give up snow boots, shovels and mittens, to celebrate February birthdays in the park. Continue Reading →

Sausage and Kale Spaghetti

Sausage Kale Pasta | (Cooking for) Kiwi & Bean | www.kiwiandbean.com

Do you ever have those “how did I get here” moments? As in one minute I’m sitting in a university dorm room watching (the original) 90210 and the next I’m sitting on the couch watching Dora the Explorer with MY TWO KIDS. Yes…MY kids. Two of them. Ack. Remind me how I got here? Sure there were 15 intervening years of school, work, ill-advised relationships and the rest of it…but seriously how the heck did they disappear so darn fast? When did I become a mortgage-paying, casserole-making, SUV-driving mom? And if the past 15 years are a blur, what of the next 15? Before I know it I will be lamenting my pot-smoking teenage kids between hot flashes and Botox injections.  Is that how it goes?

This is not a novel thought, I realize. Ya ya ya time flies when you’re having “fun”. But I’ve been reflecting a lot on this lately. Explainable by the pregnancy factor, perhaps. Pantry Pasta with Kale, Chickpeas and Sun Dried Tomatoes

Pantry pasta with kale, chick peas and sun dried tomatoes from Kiwiandbean.com

And so I rifled through my pantry and freezer, where a forgotten bag of frozen kale, and its “suggested serving” recipe, caught my eye.

Pantry pasta with kale, chickpeas and sun dried tomatoes from Kiwiandbean.com

In my pre-Bean days, I turned my nose up at these back-of-the-package recipes, considering them marketing ploys designed only for the most unimaginative of home cooks. But, honestly, what’s not to like about a recipe for which you already have the main ingredient? Continue Reading →

The best, and incidentally the easiest, tomato sauce you will ever make

Easy peasy tomato sauce from Kiwiandbean.comI consider myself a bit of authority on tomato sauce. While living in student residence in my first year of university, I ate pasta with tomato sauce every night. True story. Those were the good ol’ days when pasta, being low fat, was considered a health food. Sigh.

Notwithstanding the depth and breadth of my tomato sauce experience I struggled for years to find a recipe  that really knocked it out of the park. Until now. Enter Marcella Hazan, who I am told by the ever-reliable Wikipedia is “one of the foremost authorities on Italian cuisine”. Her tomato sauce with butter and onion (I know that sounds a bit gnarly, but bear with me!) has become a bit of a food blogger legend. Google “Marcella Hazan tomato sauce” and see for yourself. One is not a proper blogger until one opines on Ms. Hazan’s sauce, apparently, and so I weigh in…
